Ace of Spades acid place and a cleanMatassa Ace of Spades comes from the Les Myrs plot in Roussillon, where Carignan and Mourvdre grow on volcanic soils with black marl. This soil gives the wine a clear earthy side, with light smoky touches that sit beside notes of red fruit, forest berries and gentle spice. The winemaking is low intervention: the grapes are handled by hand, fermented with native yeasts and bottled without fining or filtration. A short maceration keeps the wine fresh
