The grapes go through a 4 day cold infusion with the bunches kept whole, a gentle step that helps bring out extra aroma and a light, rounded texture. Instead of pressing, the juice is taken off by saigne, then fermented in stainless steel to keep the wine fresh and clear. Expect a bright, easy drinking style with a subtle skin touch character
